Here is my goal. I wish to host a couple of websites on my server.

I'm using SUSE Linux 9.0 Professional which has Apache2

How do I go about setting up my two websites I wish to host from my
server. I need a step by step guide through this. The location of my
htdocs folder is in /srv/www/htdocs. Now I am not sure if this helps
you out or not, because other boards, users are telling me to look for
htdocs in /etc/www/htdocs - which doesn't exist on my end.

Now, when I try to type in 127.0.0.1 in my browser its saying it cannot
connect - what is causing this problem? It was working before because I
actually saw the apache page appear. Not sure exactly what had
happened, and I am unclear on what to look for in correcting this.

Where should I enter my IP addresses for these two websites. The
external IP address and the internal IP address?

I am using YAST for the configuration, but if someone knows another
way which may be easier, by all means let me know.

If you need any more information, please ask. I'm desperate to get this
server up and running.

Also, I'm looking to setup an email server on the same box - what would
I need in order to complete this. I want each website I'm hosting, have
their email addresses.

Apache isn't started or you have a firewall that is blocking port 80.
Check which one is true.

You don't. You need a DNS that will resolve the domain name(s) into your
public IP address, then you configure VirtualHosts in the apache
configuration.
See the documentation of Apache for VirtualHosts.
