Howdy Neil,
Most of the available shopping carts and ecommerce software is product
rather than service oriented. With a little inventive thinking, some of
them can be adapted without needing to modify their scripts extensively.
This is one of the areas that can be really sticky. Many hours are likely
to get thrown away attempting to find off-the-shelf solutions and/or
designers that claim they can do it and can't finish the job of ensuring
everything works properly.
Whatever solution you select, use some pages like:

certified for credit card transactions. Please keep in mind the shopping
carts on this list have only been tested for using the gateway properly and
does not certify they are bug free or any security issues on the server.
You'll find my BIZyCart on the list and it looks like oscommerce (another
popular solution) finally got certified.
