Is it possible to map a subdomain to an external IP address using the
tools provided in WHM or Cpanel? I'd like to be able to map a domain
like homeserver.flatnet.net to my home server.

Yes, if your host has it set up that way. I.e. if you have a reseller account
with permissions to manage the DNS (for your domains)

Alternatively, you can have your domains dns elsewhere (easydns is a good
one -Free) and simply point the A record for homeserver.flatnet.net to your home
IP while all the others for the domain point to your hosts IP.<!-- ~MESSAGE_AFTER~ -->

I answered my own question not long after posting it. I just needed
to alter the A record through WHM.

Thanks for responding though, now I just need to try and get my
apache virtualhost configuration working. :s
