Isn't it possible to host more than 1 domain on a
computer/server by installing more than 1 nic and
assigning each nic with its own IP address??

if so where could I find more information on setting up a
windows 2003 web server at home.

Yes, though not normally done. You can add IP addresses to NIC's
without adding a new NIC. Or use host headers:
